Thai Strawberry Salad with Squid Skewers

Strawberries are a delicious snack to have in the fridge when they are in season, November to May each year.

Pop a few whole strawberries in the kids’ lunch boxes for a sweet post-sandwich treat; make a quick and healthy after school fruit salad by dicing strawberries, apple and orange; or throw a handful into the blender with a banana, milk and yoghurt for a deliciously filling breakfast smoothie. Or you can make this delicious and healthy meal of thai strawberry salad with squid skewers.

Thai Strawberry Salad with Squid Skewers

Ingredients:

– 12 baby squid, about 1.5 -2kg, cleaned 1tbsp olive oil
– 60g palm sugar, grated
– 2 tbsp hot water

– 2 tbsp fish sauce
– 100ml lime juice
– 1 clove garlic, crushed
– 1 long red chilli, thinly sliced with the seeds (optional)

– 1 x 250g punnet Victorian Strawberries, washed and hulled
– 1 continental cucumber
– 1 red onion, peeled and thinly sliced

– 1 medium carrot, peeled, sliced into long strips with a vegetable peeler 1 cup bean shoots, rinsed and drained
– 1⁄2 bunch mint leaves, chopped
– 1⁄2 bunch coriander, chopped

– 1⁄2 cup peanuts, toasted and roughly chopped Lime wedges to serve
– Wooden skewers about 18

Method:

  1. Preheat BBQ or chargrill.
  2. Cut the squid tubes open and score a diamond pattern on inside of tubes and dry thoroughly with paper towel. Then cut each squid into three long even strips.
  3. Refrigerate in a large bowl while you make the dressing/marinade.
  4. Put the palm sugar and water in a small pot and heat gently to dissolve the sugar.
  5. Pour into a medium bowl and add the fish sauce, lime juice, garlic and chilli. Whisk to combine.
  6. Pour oil and 2-3 tbsp of the dressing over the squid and coat evenly, leave to marinade for 10 minutes. Do not leave any longer as the lime will start to cook the squid and it may toughen.
  7. Cut the strawberries into quartered wedges, place in a large bowl. Using a potato peeler, peel the cucumber into thin ribbons down to the seeds. Discard the seeds.
  8. Add the cucumber ribbons, the onion, carrots slices, bean shoots and the mint and coriander to the strawberries and toss together.
  9. Thread 2-3 of the squid strips on to each wooden skewer.
  10. Cook the squid skewers on an oiled chargrill or barbecue over high heat for 1-2 minutes each side until just cooked.
  11. Grill the lime wedges to give a caramelized finish.
  12. Toss the dressing through the salad and serve evenly onto 4 plates.
  13. Top with the grilled squid and sprinkle with toasted peanuts. Serve immediately with grilled lime wedges.
